CAKE: prepare two 6-8 inch round pans or glass dishes by making 2 circles of wax paper by tracing your pans and cutting them out.
Grease pans / glass dishes and add the wax paper and grease again
Preheat oven to 350 degrees
Add together eggs, sweetener, baking powder and cocoa. Mix slowly so coco doesn’t fly everywhere 🙂 and then turn speed to medium.
Once thoroughly mixed add in oil and mix again.
Add to your prepared round pans or dishes and put in 350 degree oven
Bake for 40 min
Pull out of the oven and cool for a few minutes, then flip onto cookie sheet lined with plastic wrap (they should come right out)
Remove wax paper and put more plastic wrap over the top and cool in fridge
FROSTING: Start with coconut butter and cream with mixer, add in the coconut milk and melted chocolate and mix until combined.
Add sweetener and cocoa powder and finish mixing.
GANACHE: note: make this right before adding it to the finished cake
Heat coconut milk for 30 seconds, add chocolate and stir until smooth. Add to a plastic bag and cut a tiny hole in the tip.
Squeeze ganache from bag to decorate cake
FINAL ASSEMBLY: place 1 layer of cake on plate or cake stand. Add think layer of frosting and cover layer with 2nd layer. Repeat. Add design with Ganache. Cool in the refrigerator. Serve!
