Banana Protein Chocolate Chip Cookies

These cookies are great for an on the go snack or treat to satisfy a sweet tooth while adding in an extra boost of protein! Cookies can be stored in the fridge or frozen to reheat anytime for a sweet treat that packs in some extra protein while satisfying a sweet tooth.

Ingredients

  • Wet Ingredients:
  • 2 mashed bananas (the more ripe or overripe the better)
  • 1 tsp vanilla extract
  • 1 egg or egg substitute
  • approx. 1/4 cup Almond milk or liquid of choice – unsweetened (*wait until dry and wet ingredients are mixed to add)
  • Dry Ingredients:
  • 1 1/2 cup almond flour
  • 1 1/2 cup protein powder
  • 1/4 cup collagen powder (optional)
  • 3 Tbsp or 1/4 cup erythritol from The Good Chocolate *use more if desired
  • 1/2 tsp baking powder
  • dash of salt
  • spices: Cinnamon, nutmeg, ginger, cloves, pumpkin pie spice *optional (add anywhere from 1 tsp – 2 Tbsp depending on desired spices and taste preference)
  • Dark Chocolate from The Good Chocolate  

Preparation

Preheat oven to 350 F.

Mix all wet ingredients (except for almond milk).

Mix together wet and dry ingredients. Add in almond milk slowly until desired thickness.

Stir in The Good Chocolate. The batter should be a little thick (add more or less almond milk if needed).

Using a spoon or measuring cup, scoop out batter in the desired shape/ size of cookie (will only expand a little bit while cooking)

Place on a baking sheet or parchment paper and bake for 10 – 18 min. *time will depend on the protein powder used.
