Ingredients

  • 100 g Butter (1 stick)
  • 2 cups Sugar
  • 1-2 tbsp Honey
  • 2 Eggs
  • 2 tsp Baking Soda
  • 1/2 cup Milk
  • 1/2 cup Cocoa Powder
  • 4 cups Flour
  • pinch of Salt
  • 🎂Frosting:
  • 700 g Sour Cream
  • 250 g Sugar
  • 1 tsp Vanilla
  • 40 g Corn Starch
  • 2 Eggs
  • 300 g Butter, at room temperature

Preparation

Whisk up the eggs until frothy. In a large pot, combine butter, sugar, honey and milk. Over low heat, cook just until the butter and sugar are melted, whisking constantly. Add the eggs and baking soda. Cook on low for another 7-8 minutes. Don’t forget to keep whisk every 20-30 seconds. *You can also do this over a water bath*

Let the mixture cool slightly for just a few minutes. In a separate bowl, sift together: flour, cocoa powder and salt. Combine with the wet ingredients using a spatula, forming the dough.

Divide the dough into 10-12 balls. Place on a floured plate, cover with plastic wrap and let rest on the fringe for at least 30 minutes.

In the meanwhile prepare the sour cream frosting: 
Prepare a water bath. In a smaller pot, combine sour cream, eggs, sugar, vanilla and corn starch. Cook until the frosting thickens, constantly mixing with a whisk. You know it’s ready, when whisk is leaving “waves” on the frosting. Take off the heat and let cool until room temperature. Beat butter with a hand mixer until light and creamy, combine with the sour cream part.  Set in the fridge until ready to assemble the cake.

Take the dough out of the fridge. Roll each ball out very thin on a piece of parchment paper. Cut out a circle, using a large plate. Collect the leftover dough to create an extra circle. Poke each circle with a fork all around. Bake each layer at 350 F for 7-8 minutes. Let cool completely. 
Note: you can bake one layer  for a little longer to crisp it up. Grind it and use to decorate the sides of the cake.

When ready to assemble, spread the frosting evenly between each layer. Decorate as you wish. I like to top mine with chocolate ganache. Les set in the fridge overnight or for at least for 4 hours. Enjoy!
